Why use the weight system
In European kitchens, a kitchen scale is standard equipment. Most recipes in Europe specify quantities of bulk dry ingredients as weight. For example, a cake recipe would require 250 grams of flour whereas in the USA, the same recipes would specify cups which is a volume measure as compared to a weight. So what? There is great variation in the amount of ingredients that can be placed into a cup. There could be as much as 25% variation based on how packed the ingredients are in the cup and the ingredient coarseness. Using a kitchen scale for weights, on the other hand, provide you with the exact amount of ingredient. This makes a tremendous difference in how the recipe turns out. Aside from being more accurate, weighing is usually easier and less messy than scooping and leveling ingredients. Consider purchasing an Escali Pana Volume Measuring Digital Scale. A preprogrammed list of more than 150 ingredients for precise volume measurement is included. This can help solve the difficulty and time of converting your recipe from volume units to the more accurate weight method using a kitchen scale.
Tare feature
We offer two types of kitchen scales. They are digital scale and spring(mechanical) scales. The digital scale is the most accurate but if you purchase a less expensive spring scale in the range of 5-10 pounds, you may be ok. The important aspect of the kitchen scale is to have a tare feature. This allows you to weigh only the product that you put into the bowl. Each time you add an ingredient, you then tare the scale back to zero and add the next ingredient. This eliminates dumping each ingredient out into a mixing bowl before weighing the next one. Most all of the kitchen scales on our web site have the tare feature.
Scale accuracy
For ingredients where a tablespoon or less is involved, its generally wise to stick with teaspoons and tablespoons. Most kitchen spring scales are just not accurate enough. For example, if you have a kitchen scale that works in 5 to 10 gram increments and a recipe asks for 7 grams, the accuracy is not good enough. However, most of our digital kitchen scales are accurate to 1 gram which makes this problem less severe. You can also add a 9V AC adapter to some of the digital scales available.
